Following up on my previous post and I've been trying to stay good on my sugar fiend post and eat less diary. So far so good and with this recipe, I can have my parfait and eat it too!
1. Take a full fat can of coconut milk and place in the refrigerator overnight. The next day, take the can out of the refrigerator and scoop out 1/2 cup of coconut cream (the thick, creamy layer at the top of the can. Don't use the water at the bottom).
2. Mix the coconut cream with 1 tsp of vanilla extract, 1 tablespoon of honey and 1 tsp of cinnamon.
3. Place a spoonful of granola at the bottom of a cup or jar. Add a spoonful of the coconut cream mix, followed by a spoonful of cherries. Continue to later granola, coconut cream and cherries until you reach the top of the cup or jar.You can be creative and use crushed nuts for granola, add different spices to the coconut cream mix, and different fruit!
