Shrimp and Pea Salad

Continuing with my "What I've Been Cooking" post, here is a healthy salad that helps to curb my craving for bacon. I saw this recipe in Self magazine. It looked delicious and I wanted to try it, but I had to get creative since I'm not eating bacon anymore (well you know, making it a rarity). I actually think that shrimp is a good replacement for bacon since I can caramelize it by sauteing it in a skilled. It's not fully the same but it still taste really good.
1/8 cup of chopped sauteed shrimp1/4 cup of peas1 boiled egg chopped1 cup of romaine lettuce 2 tablespoons Dijon Mustard Dressing (see below)
Dijon Mustard Dressing: Mix one part olive oil to one part Dijon mustard with a pinch of salt and a splash of lemon juice. Mix until combined.
