Homemade applesauce

This weekend, I cleaned out my refrigerator and realized that I have a ton of apples just sitting in my crisper drawer. I wasn't in any mood to blend them, and I didn't feel like freezing them either (can apples even freeze well). So instead, I made some applesauce...which probably means I'm sick of this humidity and ready for autumn, lol. This recipe was actually really easy; it's very delicious and the cinnamon, nutmeg, and maple syrup reminded me of changing leaves and cooler weather.

Ingredients:
8 apples, cored and chopped
1 tablespoon lemon juice
1 tablespoon cinnamon
1 tablespoon nutmeg
1 teaspoon vanilla
1/8 cup maple syrup

Directions:
Add all of the ingredients in a food processor, and on the lowest setting, pulse everything together until you get your desired consistency. Keeps for up to a week in the refrigerator.
